Fatima's Holiday Spice Cookies

Ingredients:

Cookie Dough:

1 cup unsalted Butter
2/3 cup sugar
1 egg
1 tsp real Vanilla
2 cups unbleached white flour
½ tsp salt
1 tsp grated lemon rind

Topping

1 & 1/2 cups coarsely chopped English Walnuts
2 egg whites
1/4 cup sugar
1/4 tsp ground cloves
1/2 tsp ground cinnamom
1/8 tsp ground nutmeg

Cookies Dough: Cream butter with sugar. Beat in egg and Vanilla. Combine and then add flour, salt and grated lemon rind. Mix well, and chill the cookie dough for at least 3 hours, overnight is preferable.
Topping: Combine all ingredients.

Preheat oven to 350 degrees. Roll the cookie dough to 1/8 inch thickness on a well floured board. Use plastic wrap to make the rolling process easier.
Cut with a cookie cutter of your choice.
Place on cookie sheet leaving an inch space between each cookie.
With a teaspoon, put a heaping teaspoon of topping in the center of the cut cookie.
Bake in preheated oven until the bottom of the cookies are slightly golden.
Let cool completely on the cookie sheet.
Remove and store in an airtight container.
This cookie freezes very well, you may use more spices if you prefer a spicier cookie
