Hutspot
a traditional Dutch dish

Despite its simplicity, this is delicious. In Holland, it's usually served
with braised beef (pot roast) and gravy and/or smoked sausages.
A nutritious change of pace from plain mashed potatoes - and kids love it!

INGREDIENTS:

2 pounds potatoes
1 pounds carrots
1 pound onions
butter
salt
pepper

Amounts are approximate and proportions can be adjusted to suit particular tastes.
You can't ruin this stuff!

INSTRUCTIONS:

Peel the potatoes, carrots & onions and cut them in pieces while bringing large pot of salted water to a boil. Boil vegetables approximately 20 minutes until potatoes are soft. Drain the vegetables
and mash well. Add butter, salt & pepper to taste.

Serves 4 to 6

I make the traditional pre-18th century Dutch hutspot with parsnips. About 3 parts parsnip to 1 part carrots. It is fantastic! The next day you can make little mashed cakes and fry them in butter. Ambrosia!! Much better than the potato variety.
