Impossible Taco Pie

You'll notice that this pie recipe doesn't call for a crust on the bottom and the bisuit mix is just poured on top of the meat mixture. After baking, a crust will have magically formed on the bottom! You'll think "impossible!", which is what gave this dish its name :)

 

Ingredients:

1 pound ground beef

1/2 cup chopped onion
2 envelopes Taco seasoning mix
(less if desired)
1 4 ounce can green chilies
, chopped and drained (opt.)
1 1/4 cup of milk
3 eggs
3/4 Cup of Bicuit Mix
1 cup shredded cheese (For ease, use pre-shredded, preferably a 3 cheese blend)
Lettuce, shredded (prepackaged salad mix will do fine)
2 Tomatoes, Diced (If you're in a rush, canned tomatoes may be used)
4 ounces of sour cream

Directions:
Pre-heat oven to 400 degrees. Grease a large pie plate. Brown meat and chopped
onion in skillet. Drain well. Stir in taco seasoning mix. Place meat in pie plate, and spread
evenly. Top with green chiles, if desired. Beat milk, eggs, and biscuit mix until
smooth. Pour over meat mixture. Bake for 25 Mins. Top with half of tomatoes and cheese.
Bake for additional 10 mins. Cool 5 Mins. Garnish with an outside ring of chopped lettuce, a ring of remaining tomatoes and place sour cream in center. (Sour cream may be served on the side). Top with remaining cheese.
